Pork chops with garlic, mushrooms and spinach.

I will preface this with a note: I cooked my pork chops via sous vide according to this resource. This sauce can actually be used on other proteins as well, such as chicken.

Ingredients

  • 1 tablespoon vegetable oil
  • 5 tablespoons butter, melted
  • 5 boneless pork chops (thick-cut)
  • 8 ounces white or cremini mushrooms, sliced
  • 1/2 medium sweet or yellow onion, diced
  • 1 garlic clove, minced
  • 2 tablespoons flour (or gluten-free flour blend / cornstarch)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups baby spinach leaves

Directions

    Cook your protein any way you want — sous vide, stovetop, or grill. I sous vide'd my chops then seared them in the pan that is used here, then removed them to a side plate.

    Heat up the pan again with oil and butter on top (add butter on top of the oil to keep it from burning).

    Add mushrooms and onion to the pan. If necessary, add a little more oil. Cook until mushrooms are browned and onion is soft. Season with salt and pepper. Transfer the mushroom/onion mixture to the plate with the protein.

    Add the remaining 4 tablespoons butter to the pan. Place over medium heat and cook the garlic in the butter for 1 minute.

    Sprinkle flour into the pan. Stir and cook for 1 minute.

    Gradually whisk in the chicken broth and heavy cream.

    Stir in the garlic powder, salt, and pepper.

    Add the Parmesan cheese and spinach leaves. Stir well. Return the pork chops and mushroom mixture to the pan. Heat through and then serve.

Notes

  • Serve over pasta or rice.
