Marinade time: 2 hours
DRIPPING with juice! My kids love this easy chicken recipe. I find that 12 drumsticks fit perfectly on a pan.
I like to make 2 batches at once so I double the recipe below but make them separately. This way they both turn out evenly since I marinate the chicken 6 pieces at a time in a gallon ziploc bag.
Ingredients
- 1/3 cup olive oil
- 2.5 tbs lemon juice
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp salt
- 1 tsp black pepper
- 2 tsp paprika
- 1/4 cup brown sugar
- 1/4 cup soy sauce (low sodium is fine; or gluten-free tamari)
- 6-7 drumsticks
Directions
- 01
Dump all the ingredients except the chicken in a bowl and whisk it up nicely.
- 02
Put 6-7 drumsticks in a 1 gallon ziploc bag.
- 03
Pour the marinade over the chicken, seal the bag and remove excess air, then gently massage the marinade to cover the chicken.
- 04
Put it in the fridge for a minimum of 20 minutes. 2-8 hours is preferable, flipping it about every 2 hours to marinate evenly. Don't marinate overnight; the marinade will become thick and chunky.
- 05
Cover the bottom of your baking sheet with butter or non-stick foil. Cooking spray and oil will still make the chicken stick to the pan.
- 06
Cook the chicken in the oven at 425°F for 30 minutes, then pull it out and flip the chicken. Put it back in for another 10-15 minutes or until the color is where you want it.
