Buttery, crispy smashed potatoes! Crazy crispy on the outside and fluffy on the inside.
Ingredients
- 1.5 lb small potatoes (red/yellow are best)
- 3 Tbs butter, melted
- 1 Tbs olive oil
- Salt and pepper
- Optional toppings:
- Finely chopped parsley
- Shredded cheese
Directions

Bring a big pot of water to a boil.

While the water is heating, wash your potatoes.

Boil the potatoes for 20-25 minutes; larger potatoes might take 30.

Drain the potatoes into a colander and let them sit for 5 minutes.

Preheat your oven to 350°F.

Place the potatoes on a baking sheet and, with a potato masher or large fork, squish them down.

Let the potatoes steam for another 5 minutes and dry out a little — this adds to the crispiness.

Melt the butter.

Spread the melted butter over the potatoes.

Spread the olive oil over the potatoes.

Salt and pepper as you like.

Bake in the oven for 40 minutes or until crisp.
Notes
- After pulling the potatoes from the oven, shred some cheese over them and return to the oven to melt.
- Or chop up some parsley and sprinkle it over the top.
- Or serve with baked potato toppings like sour cream, bacon bits, and green onions/chives.
